Ingredients
For the Filling

1kg Flatts Farm Braising Steak, cut into chunks

2 tbsp plain flour

2 tbsp olive oil

2 onions, diced
-
2 carrots, sliced
-
2 celery sticks, chopped
-
3 garlic cloves, crushed
-
500ml good quality beef stock
-
330ml dark ale
-
2 tbsp tomato purée
-
2 tsp Worcestershire sauce
-
2 bay leaves
-
2 sprigs fresh thyme
-
Salt and freshly ground black pepper
For the Pie

1 sheet ready-rolled puff pastry

1 egg, beaten

Method
Step 1
Lightly coat the braising steak in the flour before seasoning with salt and black pepper.
Heat the olive oil in a large pan and brown the beef in batches until well coloured. Transfer to a casserole dish.
Step 2
Cook the onions, carrots and celery for around five minutes before adding the garlic and tomato purée. Cook for another minute.
Step 3
Return the beef to the pan before pouring in the ale and beef stock.
Add the Worcestershire sauce, bay leaves and thyme.
Bring to a gentle simmer before covering and cooking in the oven at 160°C (Fan 140°C) for around 2 hours, or until the beef is fork tender.
Step 4
Allow the filling to cool slightly before transferring it to a pie dish.
Lay the puff pastry over the top, trim the edges and crimp with a fork.
Brush with beaten egg.
Step 5
Bake at 200°C (180°C Fan) for 30–35 minutes, or until the pastry is crisp, golden and beautifully risen.
Allow the pie to stand for five minutes before serving.
