Ingredients

1kg Flatts Farm Beef Shin, cut into chunks

2 tbsp plain flour

2 tbsp olive oil

2 onions, diced
-
3 carrots, sliced
-
2 celery sticks, chopped
-
3 cloves garlic, crushed
-
2 tbsp tomato purée
-
500ml good quality beef stock
-
250ml ale or red wine (optional)

2 tsp Worcestershire sauce
-
2 bay leaves
-
2 sprigs fresh thyme (or 1 tsp dried thyme)

Salt and freshly ground black pepper
Method
Step 1
Pat the beef shin dry with kitchen paper before lightly coating it in the flour. Season generously with salt and black pepper.
Step 2
Heat the olive oil in a large frying pan over a medium-high heat. Brown the beef in batches until it develops a rich golden crust on all sides. Don't overcrowd the pan—this step adds incredible depth of flavour to the finished stew.
Step 3
Transfer the browned beef to your slow cooker.
In the same pan, gently cook the onions, carrots and celery for around five minutes until they begin to soften. Add the garlic and tomato purée, cooking for another minute before pouring in a splash of the stock to lift any caramelised bits from the bottom of the pan.
Step 4
Pour the vegetables into the slow cooker along with the remaining stock, ale or red wine (if using), Worcestershire sauce, bay leaves and thyme.
Step 5
Cook on Low for 8 hours or High for 5 hours until the beef is beautifully tender and can be pulled apart with a fork.
Step 6
Taste the sauce before serving and season with additional salt and pepper if needed. If you'd like a thicker gravy, stir in a little cornflour mixed with cold water during the final 20 minutes of cooking.
