Ingredients

1.5kg Flatts Farm Beef Brisket

2 tbsp olive oil

2 onions, sliced

3 carrots, chopped

2 celery sticks, chopped

4 garlic cloves, crushed

2 tbsp tomato purée
-
750ml beef stock
-
2 tbsp Worcestershire sauce

2 bay leaves
-
3 sprigs fresh thyme

Salt

Freshly ground black pepper

Large casserole dish with lid

Method
Step 1
Remove the brisket from the fridge 30 minutes before cooking.
Season generously with salt and black pepper.
Step 2
Heat the olive oil in a frying pan and brown the brisket on every side until deeply coloured.
Transfer to a casserole dish.
Step 3
Cook the onions, carrots and celery for around five minutes before adding the garlic and tomato purée.
Transfer the vegetables to the casserole.
Step 4
Pour in the beef stock and Worcestershire sauce before adding the thyme and bay leaves.
Cover with the lid.
Step 5
Cook in a preheated oven at 150°C (130°C Fan) for around 5 hours, or until the brisket pulls apart easily with two forks.
Step 6
Slice or shred the beef before serving with the rich cooking gravy.
