Ingredients

For the Bolognese Sauce

  • 1kg Flatts Farm Beef Mince

  • 2 tbsp olive oil

  • 1 onion, finely diced

  • 2 carrots, finely diced

  • 2 celery sticks, finely diced

  • 2 garlic cloves, crushed

  • 2 tbsp tomato purée

  • 2 x 400g tins chopped tomatoes

  • 300ml beef stock

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 2 bay leaves

  • Salt and freshly ground black pepper

To Serve

  • 400g dried spaghetti

  • Freshly grated Parmesan

  • Fresh basil (optional)


Equipment

  • Large saucepan or casserole dish

  • Large pan for pasta

  • Wooden spoon


Method

Step 1

Heat the olive oil before gently cooking the onion, carrots and celery for around 8 minutes until softened.

Add the garlic and cook for another minute.

Step 2

Increase the heat and add the beef mince.

Cook until browned, breaking it up with a wooden spoon.

Step 3

Stir in the tomato purée before adding the chopped tomatoes, beef stock, Worcestershire sauce, oregano, basil and bay leaves.

Bring to a gentle simmer.

Step 4

Cook uncovered for around 45–60 minutes, stirring occasionally until the sauce becomes rich and thick.

Season to taste.

Step 5

Cook the spaghetti according to the packet instructions until al dente.

Reserve a little pasta water before draining.

Step 6

Serve the Bolognese over the spaghetti before finishing with freshly grated Parmesan and fresh basil.
